There are many good fortune cookie recipes, and I've probably tried them all in pursuit of the perfect fortune cookie recipe and combination of ingredients. There's no need for you to look any further and waste your time and efforts on many fortune cookie recipes that don't work... with much trial and error, I've finally discovered the ultimate fortune cookie recipe and method of preparation (the picture to the right is of cookies that I made using this recipe). You can change the recipe around a bit to your liking, but they are so yummy, I don't think that you'll want to!
About Fortune Cookies : History of the Fortune Cookie
The fortune cookie is a crisp cookie that is baked around a fortune, a piece of paper with faux wisdom or vague prophecy. Throughout the western world, it is usually served with Chinese food in Chinese-American restaurants as a dessert. The slip inside may also contain lucky numbers and a Chinese phrase with translation.
Fortune cookie history only dates back to the last hundred years or so...they are what we would consider a "modern" invention. Fortune cookies in their current form were first served in California by immigrants who based the cookie on a traditional Japanese cracker. The cookies are little-known in mainland China.

"My Favorite of All Chinese Fortune Cookie Recipes"
This is by far my favorite of all the Chinese fortune cookie recipes out there! This recipe should yield about 12 THIN cookies. If you don't get twelve out of the batch, you are probably making them too thick.
1 egg white
1/8 teaspoon vanilla extract
1 pinch of salt
1/4 cup unbleached all-purpose flour
2 Tablespoons sugar
1 teaspoon butter
2 Tablespoons water
1. Using a hand mixer, mix the egg white until it's foamy (not stiff). Add vanilla, water, and softened (not melted) butter and mix.
2. Sift the flour, salt, and sugar and blend into the egg white mixture. Mix until smooth...it should only take a short time. The dough will be thin. If it is too thick, try adding water a teaspoon at a time (you don't want it to get too thin).
Bake Fortune Cookies : How to Make a Good Fortune Cookie
It is a bit of a tricky procedure to make the best fortune cookie possible. They have to be really hot to achieve the desired shape, so you must move quickly. Using the above recipe, bake and shape the cookies as follows:
Step One: Preheat oven to 400 degrees (adjust the temperature if needed for your sea level).
Step Two: Prepare two cookie sheets for baking. You can either spray them directly with a non-stick spray, or use parchment paper and spray it with the same spray. Fortune cookie making will go much quicker with two baking sheets! While one batch is in the oven, you can be folding and forming the other one. I wouldn't recommend using a baking stone...I've tried making them with and without parchment paper on my stone, and they don't come out as good (they brown too fast wihch makes them impossible to fold).
Step Three: Place teaspoonfuls of the batter at least 4 inches apart on one of the prepared cookie sheets. Use a spoon to smooth them out, making them into a perfect circle if possible (you want the sides to match up when you fold them). TIP: If you want perfect circles, trace around something circular onto the parchment paper. Flip the parchment paper over, and use the circles that you can see through it as a guide.
They need to be very thin...you should be able to slightly see the pan through them. If they are too thick, they'll end up being a soft cookie--you want them thin to get them crispy.
The cookies must be folded immediately after they come out of the oven while they are still very hot, so don't make too many at a time. Start with three at a time until you see how many you can handle before they cool.
Step 4: Bake about 3-4 cookies at a time for around 4-5 minutes (depending on your oven). You want to bake them until they are brown around the edges, and the middle is still a pale color. TIP: If you bake them until the brown is very far in on the edges, you can always use a circle cookie cutter to cut the middle out for use.
Step 5: Remove from oven, and immediately place the fortune slip in the middle and fold the cookie over. Press the edges together (the crispy edges won't stick, so use the outside of the pale center).
NOTE: the fortune cookies are going to be VERY hot...you may want to use a pair of cotton gloves to handle them. Otherwise, I lay a towel on the table with a sheet of parchment paper on it, and fold them by putting my hands under the towel and using it as "gloves."
Step 6: Now that you've folded the fortune cookies, how to achieve the shape? It's easy...either pull the corners down and hang them over a measuring cup or bowl, or use an empty egg carton to bend them over.
Once they harden, place them in an air tight container. I found that if you leave them out, they absorb moisture from the air and get soft.
Giant Fortune Cookie Recipe
Have you seen those giant fortune cookies in the store? You, too, can make one at home! It is a bit trickier than making the small ones, but with a little practice, it will be great!
Use the same fortune cookie recipe from above, except instead of forming twelve individual fortune cookies, you're only going to form one.
Spread the dough out into one big circle, and bake as directed above (the time may vary with a large cookie). After you remove it from the oven, place your fortune (or note) inside, and hang it over a large bowl to get crispy.

If you're stuck for an idea, my advice is to check the internet for quotes, poems, or sayings. You're bound to come across something that will fit the theme you're going for. Make up your own lucky numbers to put across the bottom of the fortune cookie. Chinese characters and translations, typically seen at the bottom of the fortune, will be a little harder to do! You can just leave them off--they won't even notice.
