Chocolate Coated Halloween Cookies

These ghosts on a stick are not your traditional Halloween cookies! They can be made in a variety of ways, but in this project example, I made them with peanut butter cookies and a milk chocolate coating. You can also make them with white chocolate (keep them white, or change the color with food coloring), and use different decorations to change the look. Don’t just limit yourself to ghosts…they also look cute with pumpkins, candy corn, or other Halloween-themed designs drawn with icing.



Items You’ll Need to Make Halloween Cookies:

  • Nutter Butter peanut butter cookies (or similar brand)
  • 1 bag chocolate chips (12 ounces)
  • Decorators icing
  • Popsicle sticks
  • Parchment paper
  • Baking sheet
  • Knife
  • Microwave-safe bowl
  • Tongs

How to Make Halloween Cookies:

1. Line a baking sheet with parchment paper. Count out 12 cookies and 12 popsicle sticks. Lay the sticks on the parchment paper with spacing in between (you’ll see why in a minute…).

2. Using a microwave-safe bowl, melt the chocolate chips according to package directions. Most brands call for 1 minute on high, stir. Continue microwaving in 30-second intervals until smooth and completely melted.

3. Using the tongs, dip each peanut butter cookie into the melted chocolate, and flip around to coat. Gently grab the sides of the cookies with the tongs, and hold above the bowl until all excess chocolate has dripped back into the bowl. You can give them a little shake if needed.

4. Lay each cookie on top of the craft sticks that you put out earlier. Place them about half way down the sticks (see photo below).

You can use a knife to smooth the chocolate on the top. You'll need a flat surface to draw the ghosts on.

5. Place entire tray of coated peanut butter cookies into the refrigerator to harden (about 20 minutes).

6. When the chocolate has set, flip the cookies over. The sticks on the back will be showing like this:

Use a knife to spread chocolate over the sticks to cover. You should be able to use the same chocolate that you used the first time, but if it has hardened, put it in the microwave for a few more seconds. Place tray back in refrigerator to set the chocolate.

7. When they are set, flip them over and decorate them with white decorators icing. Store in a container with a tight fitting lid until you're ready to gift them.

Here is one way you may wish to give them (see below). I used a small metal bucket, filled with candy corn, to arrange a "cookie bouquet" in. You can also wrap them in individual clear treat bags topped with a ribbon.
